I’m so excited to share this recipe, sometimes I get in the kitchen and just feel like baking something new, so when I came up with this recipe I was pretty pleased. Actually, more impressed that they didn’t turn out soggy or hard as a rock. Baking with paleo ingredients can be really intimadating and/or complicated, because of all the restrictions. But I can say, as a firm believer in the paleo diet, that it is well worth it. Eventually you’ll get the feel for how things go. So with that, let me share the recipe.
2.5 cups almond meal
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon of lemon juice
1/4 cup of melted coconut oil
1/4 almond or coconut milk
1/4 cup of honey
1 cup of fresh or frozen blueberrys.
Preheat oven to 350 and bake for 12-15 minutes or until golden brown on top of the muffin.
In a small bowl, whisk together the dry ingredients. In a large bowl whisk the eggs, milk, and honey until smooth. Then little by little add the flour mixture into the wet mixture. Lastly pour in the coconut oil and blueberries mixing until everything is fully combined.
